Little golden bundles of pasta, egg & cheese.


200g fresh angel hair egg pasta. Cooked ( we use 'pastabilities')

3 x eggs

2/3 cup shredded tasty cheese

Parmesan for shaving over top

Salt & pepper


In a mixing bowl, place cooked pasta (slightly cooled), eggs, cheese and salt & pepper to taste. 

I have chosen a shallow muffin. It is important to line with baking paper on the bottom as the parmesan can stick even when greased. 

Twirl a mound of pasta onto a large fork or roasting skewer as you would if you were eating spaghetti. Gently push off fork onto baking tray. Repeat until all the mixture has gone.

Shave a generous amount of Parmesan over top of bundles.  Season if you like.

Cook in oven for around 25 minutes or until golden & firm. Remove from tray as soon as possible as parmesan will set, cool and stick to the tray. 

Best eaten immediately. 

Tip: This recipe will work really well with ham, broccoli, peas or whatever else you choose to add to the mixture.
