Sunrise Pecorino Gratin

Sunshine gratin is a wonderful way to introduce your children to a colourful array of veggies in one simple dish. This dish is also very versatile, eg. you can substitute the pumpkin with beetroot or potato with parsnip. What ever suits your family!

Ingredients:

2 eggs

1x tub of ricotta

1/2 cup of pecorino finely grated

1 1/3 cups of milk

Parmesan extra

3 medium washed potatoes

3 medium desiree potatoes

1 large carrot

3 squash

150g pumpkin

Rosemary

Salt & pepper

Method:

Preheat oven to 180C

In a bowl combine pecorino, ricotta, eggs, milk and season with salt & pepper. Very thinly slice all veggies 3 millimetres widths way. Pour cheese mixture into baking dish.

Layer veggies: potato, desiree, squash, pumpkin & carrot. Sprinkle Parmesan and rosemary on top. 

Sunrise Pecorino Gratin

Bake in the oven for 45mins.

Serves four as a side dish.
