Seasonal apricots poached in vanilla and star anise. This dessert is a delicate summer treat. Just as nice severed warm or cold with vanilla ice-cream.
5 apricots cut in half keeping the stone intact
1/2 cup of caster sugar
1 vanilla pod split lengthways
2 star anise
In a small saucepan place vanilla pods and star anise and cook over low heat. Very gently warm spices until you can smell the star anise.
Add the caster sugar and 1 cup of tap water. Gently bring to a simmer until the sugar has dissolved. Add apricots and gently stir in. Leave to simmer without a lid for 15 minutes. Remove from heat. Allow to cool slightly before serving or place into fridge to serve cold. Remember, the star anise is now only for looks...don't eat it! Best served with vanilla ice cream.
