Pink Lady Tea Cakes

Ingredients:

 

3 small Pink Lady apples

115g of caster sugar

115g of butter (soft)

115g of self raising flour

2 eggs

1 tablespoon of milk

3 tablespoons of cinnamon sugar

Method:

Preheat the oven to 150 degrees.

Greece a tin of 12 cup cake moulds (base only). Now sprinkle each mould lightly with cinnamon sugar. Take the apples and slice width ways through the middle as thinly as possible (about 2mm). Place one slice on the base of each mould. 

Now for the mixture...

Put the remaining ingredients into a bowl and mix until smooth. Spoon the cupcake mixture into each mould. 

Bake in the oven until a skewer inserted in the centre of the cake comes out clean. The cake will rise quite a bit, so now take a heavy wooden board covered in baking paper and place on top of the cakes still in their tin. Let the weight of the board squash them down for about 4 mins. Now turn them out to find lovely little apple tea cakes.
