Pecorino & pistachio figs

Ingredients:

4 figs

A handful of pistachio nuts

Pecorino cheese

Vino cotto or caramelised balsamic vinegar

Method:

Slice the figs length ways. Crush the pistachio nuts. Shave the pecorino. 

Arrange the figs on a plate and sprinkle each fig with the crushed pistachios and pecorino cheese. Drizzle the figs with vino cotto just before serving.

Simple and delicious.
