Simplicity at it's best... What better way to enjoy our pick of the week than Italy's Insalata Caprese?
4 vine ripened truss tomatoes
1 buffalo mozzarella
Extra virgin olive oil
Salt & pepper
On a plate, arrange the slices of tomato and mozzarella, alternating one after the other and fanning out. Tear the fresh basil over the salad. Sprinkle with salt and pepper followed by a drizzle of extra virgin olive oil.
