We decided to give the griddle a go! And the Kipflers came up a crunchy, spicy treat. If your not into hot and spicy try this recipe with butter, parsley and lemon zest.
250kg of washed kipflers
40g of butter
1 tablespoon of cumin seeds
2 tablespoons of cajun spice mix
*A griddle is needed for this recipe but if you don't have one they will taste just as good using a frypan.
Place Kipflers into a pot of cold water, bring to boil and turn back to a simmer. Cook until tender, around 25 mins.
When ready drain potatoes well and allow to cool and dry slightly.
Crush the cumin seeds and mix with the cajun spice. Take Kipflers and cut down the middle length ways. Sprinkle the cut sides evenly with the Cajun & cumin spice mix.
Heat the griddle and when hot enough pop on the butter and spread over griddle. Place the Kipflers spice side down and cook for around 5 mins until they are a dark, golden brown.
