These delicate mushrooms from Asia are our pick of the week. Enoki mushrooms come in clumps of long spaghetti like stems topped with small snowy white caps. They have a crunchy like texture and a mild delicate taste.
How to pick:
Choose fresh enoki that are firm and white. Avoid any Enoki that are discoloured or slimy.
How to prepare:
Trim the woody stems and rinse them under cold water.
How to cook:
Enoki are traditionally used in salads and stir fries but can also been eaten raw in salads. If cooking enoki add them to your soup or stir fry at the last minute as over cooking them can make them tough.
