Asparagus and Haloumi Cake

This savoury cake is somewhere between a quiche and a tart. The salty haloumi compliments the asparagus perfectly. A great dish to prepare ahead of time for a spring time picnic.
1 bunch of asparagus
1 cup of cooked brown rice
4 free range eggs
10 thick slices of haloumi cheese
1/2 cup of grated Parmesan, plus a little extra at the end
1/2 cup pouring cream
Preheat oven to 150*
In a bowl mix the eggs, cream and grated parmesan. Season with salt and pepper.
In a greased tart or pie dish evenly spread the cooked rice over the base. Now pour the egg mixture over the rice. Evenly place the asparagus spears over the top of the mixture and then place the haloumi in between each spear. In this recipe we had to cut the ends of the asparagus to fit to pie dish. Don't throw these away, we cut them into small slices and added them to the mixture.
Sprinkle with parmesan.
Place in oven for around 25 mins. Keep an eye on the haloumi, as once it begins to get colour it will go brown very quickly.
Serves 4 as a light dinner or side.
Great in a grown up lunch box!
