Almond Meal Bread with Anchovies

Salty and Savoury. Almond meal brings a rich texture to this appertiser. Perfect with a glass of chilled white wine!


1 1/2 cups of Almond Meal

1/2 cup of Plain flour

1 1/2 teaspoons of Baking soda

1 tin of Anchovies 

2 teaspoons of dried Thyme

1 teaspoon of Salt

1 teaspoon of Pepper

50g  Butter

1 tablespoon of Olive oil

1 Egg

1 cup Butter milk


Pre heat oven to 190*

Line square cake pan with baking paper

Sift flour and baking soda together. In a bowl combine flour to almond meal, salt & pepper and dried thyme. Melt butter. In a seperate bowl whisk together butter milk, olive oil, egg and melted butter. Now, pour buttermilk mixture into flour almond meal. Combine until it resembles a loose batter ( don't over mix). Pour into cake tin and line with well drained anchovies. Cook for 35 minutes or until golden brown.


Best served warm!
